Bountiful Stawberry Vinaigrette

Last week's Bountiful Basket came with a delectable basket of ripe, red strawberries. If you haven't yet signed up for Bountiful Basket, I highly suggest it. A great variety of fresh fruits and vegetables for only $15!

Strawberries are my very favorite fruit in the whole, wide world. They're relatively inexpensive and very nutritious. Unfortunately, like many other our perishable soft-skinned fruited friends, they go bad quickly. To help extend their life, I made a tasty vinaigrette that as just the right amount of sweet and savory.

the goods:
1 cup of halved strawberries
3 tablespoons of Balsamic vinaigrette
2 tablespoons of dry white wine
1/2 teaspoon kosher salt
1/4 teaspoon fresh cracked peppercorns
1/4 dried tarragon
1 packet of Truvia sweetener (Stevia)
Approx 1/2 cup of yummy, fruity Olive Oil


Take all your ingredients for a spin in a food processor, except for the olive oil. Once your strawberry puree is nicely combined, run your food processor and drizzle in olive oil. Taste your mixture after about 1/4 cup of olive oil, sometimes it can be overpowering and I usually like my dressings with less oil. Place in an air tight container and enjoy over your favorite salad!
